The Monastery of Skafidia is more than a spiritual landmark; it is part of the cultural fabric of the region and a quiet guardian of traditions passed down through generations. Our collaboration with the monastery grounds the Sympossio concept in a real, nearby place with living traditions connecting monastic cuisine directly to the land our guests experience.

Within the philosophy of our monastic gastronomy defined by simplicity, essence, and deep respect for raw ingredients, time, and place, we proudly present Assyrtiko Abelon. This distinguished new organic Assyrtiko, from low-yield vineyards in Ancient Olympia and crafted through gentle vinification, expresses with precision the terroir and microclimate of its region. A purely Greek variety with strong recognition in European markets, it stands out for its balance, refined structure, and vibrant yet perfectly integrated acidity making it an ideal companion to our culinary concept.

This initiative, a collaboration between Aegean Airlines and Aldemar Resorts, was warmly received by tourism professionals and representatives of the local market.

🎯 The presence of Angela Tzifa, Deputy Head of the GNTO UK & Ireland Office, highlighted the importance of institutional support in fostering synergies that strengthen Greece’s national tourism image.
