“Agnopites” Cretan Heavenly Pure Pies

Like many traditional dishes, “agnopites” have cultural significance in Crete. They are a part of the island’s culinary heritage and are often enjoyed during special occasions and gatherings.

Ingredients

  • FOR THE DOUGH
  • 300gr Hard flour
  • 200gr Whole wheat flour
  • 8-10gr Dry yeast
  • 200gr Sheep yogurt
  • 100ml Water
  • 50ml Olive oil
  • 30gr Sugar
  • 10gr salt
  • FOR THE FILLING
  • Olive oil for frying
  • 500g Sweet myzithra cheese

Preparation

  1. 1. In a bowl, mix the yeast, water, sugar, and 100g of the hard flour. Let this mixture stand for 30 minutes to activate the yeast.
  2. 2. After 30 minutes, add all the remaining ingredients to the bowl, except for the flour. Mix thoroughly
  3. 3. Gradually add the remaining flour, kneading until you form a dough. The dough should be slightly sticky. Allow it to rest for another 30 minutes.
  4. 4. Grease your hands to prevent sticking, and then divide the dough into small balls.
  5. 5. In another bowl, crumble the myzithra cheese into small pieces.
  6. 6. Press each dough ball flat with your hands, making them wide enough to hold a filling. Place a tablespoon of the myzithra cheese in the center of each flattened dough piece. Fold the dough over the cheese and press the edges to seal, forming thick pitas. Place them on a floured tray to prevent sticking.
  7. 7. Heat olive oil in a pan over medium heat. Fry the pitas until they are golden brown on all sides
  8. 8. For the finishing touch, you have two options: drizzle with honey and sprinkle with sesame seeds, or dust them with sugar and cinnamon.
