Particularly popular during the autumn and winter months when pumpkins are in abundant season, these pies are also a common feature at fall festivals and gatherings. Ingredients

  • FOR THE DOUGH
  • 300gr Maize flour
  • 100ml Olive oil
  • 500-550ml Water
  • 20gr salt
  • FOR THE FILLING
  • 1500gr Yellow pumpkin (butternut squash)
  • 300gr Dark brown sugar
  • 300gr Raisins
  • 150gr Finely chopped walnuts
  • 150ml Olive oil
  • 20gr Ground cinnamon
  • 10gr Salt

Preparation

  1. In a bowl, mix the flour, olive oil, and salt thoroughly. Gradually add water to form a soft dough.
  2. Set the dough aside to rest. This resting period is crucial for achieving a better quality pastry.
  3. Prepare the pumpkin by removing the seeds and peel. Bake it in an oven preheated to 180 degrees Celsius (356 degrees Fahrenheit) until it softens.
  4. After baking, transfer the pumpkin to a bowl. Mash it well and then add all the ingredients for the filling. Mix thoroughly to combine.
  5. Divide the dough into equal-sized portions and roll each into thin sheets (2-4 sheets).
  6. Place the filling around the edges of each sheet. Begin rolling the dough from the edges towards the centre in a circular motion, gently stretching it as you go to make it thinner. Continue rolling until the entire sheet is formed into a spiral shape.
  7. Repeat the rolling process with all the dough sheets.
  8. Place the spiral-shaped pastries in a greased baking dish. Sprinkle them with brown sugar and the remaining cinnamon.
  9. Bake in a preheated oven at 170 degrees Celsius (338 degrees Fahrenheit) until it turns a nice golden colour.
