Plastos with greens

This pie, unique in its preparation, is made without traditional pastry sheets but still turns out crispy on both the top and bottom. The filling options are numerous, ranging from spinach and greens to zucchini. Popular in Central Greece, Thessaly, and Epirus, this pie has variations spread across Greece. Each region adds its own special touch, giving it a unique name and a distinctive twist to the ingredients.

Ingredients

  • FOR THE BATTER
  • 1 piece Egg
  • 300ml Milk
  • 200ml Water
  • 100ml Greek Virgin Olive oil
  • Salt, pepper
  • FOR THE FILLING
  • 900 gr Various greens (spinach, wild fennel, nettle, parsley, dill)
  • 1 bunch Fresh onions
  • 500gr Feta cheese
  • 100ml Greek Virgin Olive oil
  • Salt, Pepper
  • A pinch of cumin
  • 150g Butter for greasing the baking dish and topping

Preparation

  1. In a bowl, combine all the ingredients for the batter except for the water. Mix to form a batter that is neither too thin nor too thick. Gradually add water as needed to achieve the right consistency.
  2. Grease a baking dish with butter. Spread half of the prepared batter evenly on the bottom of the dish
  3. Wash and finely chop the greens. In a separate bowl, mix the finely chopped greens with the finely chopped onions. Season this mixture with salt and rub it to release moisture. Then, squeeze out and discard any excess moisture.
  4. Add olive oil, crumbled feta cheese, and spices to the greens mixture. Stir well to create the pie filling
  5. Spread the greens filling evenly over the layer of batter in the baking dish.
  6. Pour the remaining batter over the greens layer, ensuring it covers them completely. Thin the batter with a bit of water if necessary
  7. Cut small pieces of butter and distribute them evenly over the top of the pie.
  8. Bake the pie in a preheated oven at 200 degrees Celsius (392 degrees Fahrenheit) for approximately one hour or until the pie is golden and cooked through
