Mini Cheese Pie Turnovers

Ingredients

  • FOR THE DOUGH
  • 700gr Hard flour
  • 300gr Maize flour
  • 2 packets (16gρ) Dry yeast
  • 100ml Greek Virgin Olive oil
  • 500-600ml Water
  • 100gr Fine semolina
  • 20 gr Sugar
  • FOR THE CHEESE FILLING
  • 500ml Milk
  • 500gr Feta cheese
  • 250gr Myzithra cheese
  • 250gr Anthotyro cheese
  • 250gr Graviera cheese
  • 5-6 pieces Eggs
  • Pepper
  • Nutmeg

Preparation

  1. In a bowl or using a mixer with a dough attachment, mix all the dough ingredients. The dough should be soft and easy to shape
  2. Cover the dough and let it rise at room temperature until it doubles in size, approximately 30 minutes
  3. After 30 minutes, knead the dough again and divide it into 100g portions, shaping each into a ball.
  4. In a saucepan, boil the milk and semolina, stirring constantly, until it forms a creamy mixture. Once ready, remove it from the heat and allow it to cool.
  5. When the cream mixture is cool, add all the remaining ingredients for the filling. The filling should have a moderately thick consistency. If necessary, adjust by adding a little more milk.
  6. Return to the dough: take each 100g portion and roll it into a small, flat circle (pita) on a flour-dusted surface.
  7. Place a portion of the filling in the centre of each rolled-out dough circle. Fold the dough over the filling, sealing the edges to form a parcel.
  8. Cover the filled parcels to prevent them from drying out. Then, in a non-stick pan over medium heat, dry fry them. Turn them frequently until they are golden on both sides.
  9. Just before removing the pies from the pan, brush them with butter, give them a final turn, and then they are ready to be served.
