Potato salad with boiled egg, tomato, spring onion, parsley, broccoli and olive oil with vinegar

  • potatoes 1.5kgr
  • eggs 10 pcs
  • cherry tomatoes 0.500 kgr
  • spring onions 1
  • bunch parsley fresh 1
  • bunch brokoli fresh 1
  • olive oil extra vergin 150 ml
  • vinegar from wine 50 ml
  • cappers 50 gr
  • brokoli fresh 1
  • salt and pepper


  1. Wash all the vegetables very well
  2. Boil the potatoes al dente and cut them into cubes
  3. Boil the eggs for 7 to 10 minutes and after they have cooled, cut them into pieces.
  4. Cut the broccoli into small tassels and mix it into the rest of the salad, raw or slightly boiled, keeping its vivid green color
  5. Cut the tomatoes in half, chop the parsley, the spring onion, rinse the capers very well and mix all the ingredients together in a bowl
  6. Add some flavor with salt, pepper, vinegar and olive oil.
